While I was waiting to get my hair cut, I was leafing through the magazines and came across a recipe that claimed to be “homemade V8.” I love V8 but hardly ever buy it since it’s loaded with sodium. So I was very excited to give this a shot. Unfortunately I can’t remember what magazine it was in, but I do remember the recipe to share with you.

2 large tomatoes, chopped
1 English cucumber, peeled and chopped
1 red bell pepper, seeded and chopped
1 clove garlic, chopped
1 T lemon juice
salt to taste
So while this was delicious and refreshing, it just wasn’t V8. I think because V8 has a thicker, creamier texture whereas this was extremely light and watery. If you’re looking for a light summer drink I recommend this. But I’m going to keep experimenting with the recipe.
