Whole30 Day 9

Twenty-one days to go. And today will be the last day of my Whole30 that I am allowed to eat almond butter…

 Breakfast: Coffee with almond milk. From home. Second day in a row that I had to drag myself out of bed. It’s completely my fault. I’ve been staying up way too late. I’m blaming it on Jake because he’s not here to tell me to turn off the light.

Lunch: Made another strawberry, avocado, bacon, and spinach salad. This time it turned out better. I put the avocado and bacon on the bottom, then the balsamic vinegar, then the spinach and topped it with the strawberries. That helped the spinach not to sit so long in the vinegar. Although to be completely honest, I think this is the type of salad you need to eat right after the bacon is freshly cooked. It’s not really a “take to work” salad but more of a impress your guests salad. If that makes any sense.


Snack: Apple and almond butter….plus some more almond butter.

OK. So this is where things got a little weird. I came home from work and immediately told myself that I was going to put together the new table/desk from IKEA. I’ve never actually built anything like that myself before so I was a little nervous. About 5 minutes in I noticed my stomach growling so I fixed myself my snack. But then, because clearly I needed to be eating dinner and not just an apple, proceded to eat the rest of the almond butter…right out of the container…all of it…

In reality there wasn’t a ton left, but it was still substancial enough that I felt disgusted with myself. And to top it off, because it’s the almond butter mixed with flaxseed, was way too much for my system to handle. Please learn from my mistake. Don’t eat too much flaxseed in one sitting. It will make you sick.

Needless to say, I wasn’t very hungry for dinner. And I’ve decided that because clearly I have no self control and stuffing my face with almond butter for 30 days is not going to help me lose weight, I’m not allowing myself to eat anymore for the remaining 21 days.

Anyway, since I don’t have a dinner recipe to share with you, I decided that this is the perfect time to give you the chicken recipe from my very first day of Whole30. I posted a picture of it but then never actually told you how I did it.

Crispy Almond and Herb Chicken
Adopted from Mark’s Daily Apple

Ingredients:
2 chicken breasts
1 egg
1 cup almonds, chopped
3 T of Italian Seasoning
2 T of coconut oil
salt and pepper



Chop your almonds as best you can or put them in the food processor if you have one. Add your Italian seasoning. (Alternatively you could use fresh herbs if you have them). Either pound your chicken a bit with a mallet to make it thinner or (slowly and carefully) cut the chicken down the middle to create two thin pieces. Basically you’re separating the top and the bottom half of the chicken breast. 

In a bowl, scramble your egg. Then dip each piece of chicken in the egg and then in the nut and herb mixture. A helpful tip: only let one hand touch the egg and let the other hand touch the dry mix. This will prevent everything from becoming a sticky mess. 


Fry your chicken in coconut oil until cooked through. Unfortunately I can’t remember exactly how long it took for me. I want to say as little as 5 minutes per side. But always double check with your meat thermometer.

You could definitely experiment with this one. Even Mark Sisson says to go crazy with it. Try different types of nuts. Try different herbs. Lots of options.

    I’m doing the Whole30 too (only start if week too today) .
    Funny cos my Friday day was similar. Coffee with almond milk. Cashew crusted chicken breast (with added tomatoes in the middle).
    Yum yum!
