Hey. So in this week’s WIAW post I mentioned that I tried making PaleoOMG’s Zucchini Wrapped Pesto Sausage. And since I’ve got some time to kill right now, thought I would write up a quick explanation of how I made them. 

Zucchini Wrapped Pesto Sausage
Inspired by PaleoOMG

Ingredients:
2 zucchini
4 sausages (I cooked all 6 but only needed 4 for this recipe)
1/2 cup walnuts
1 cup fresh basil
1/3 cup olive oil
3 T lemon juice
3 garlic cloves
About 2 T of coconut oil


Place your sausage in a skillet on medium heat and brown for a few minutes. Then fill up your pan with about 1/4 cup water and cover. Cook for about 12 minutes or until the water disappears. Turn off heat and set to the side.


Now for the pesto. In your food processor, add your walnuts, basil and garlic. Turn on for a few pulses to get going. Add a little olive oil and turn it on. Then begin to add the rest of the olive oil while it’s still running. Blend until smooth. Then add the lemon juice and mix for a few more seconds. You can taste it now to make sure you like it.


For the zucchini, I think it really helps to have a mandoline like I have pictured on the left. I cut off both ends of the zucchini and then sliced it to the desired thickness. I have no idea how thick that is. Maybe 1/4 inch? If you don’t have a mandoline, you could probably just slice it using a knife. Just be careful not to cut yourself.


I then heated up my skillet with some coconut oil and sautéed the zucchini for about 30 seconds each side. You can see from the picture on the right that they turned a little brown. Don’t know if that means they were burnt or what. But they seemed OK to me.


Now for the fun part. Take a zucchini and cut a piece of sausage to fit the width of it. Add a small bit of pesto down the middle. Remember that it will squish out as you roll, so don’t put too much. Also it’s going to be messy so do it on a cutting board and have paper towels ready for your hands. 

Place the sausage at the top and roll. Voila! Keep following those last steps until all of your zucchini strips are pestoed up and hugging a piece of sausage. 

Now as for what I think of them. They did taste yummy and I will definitely be trying this recipe again. However next time I think I want to just try it the way PaleoOMG did them. She cooked everything on the grill (sausage and zucchini). I feel like by frying the zucchini, they got really oily. As I was rolling them up, I had to constantly clean off my hands. I think it’s fine to make it this way if you don’t have a grill (or are just out of gas like I was). But I’m tempted to see how grilling affects the final result.

PS. On a completely different side note, what do we think of the pictures in this post? Still using my iphone but using the Camera+ app instead. And I brought a lamp into the kitchen to add more light. Improvement? Or about the same?
