Maybe it’s been the freezing weather or the fact that everyone and their mother is getting sick (my mom included), but last week I was in the mood for soup. Rich, hearty soup that, most importantly, I could make in the crockpot. Thankfully, I found this recipe on robbwolf.com. I mentioned it in last week’s What I Ate Wednesday. With a few changes, it was exactly what I needed. Plus by cooking the beef in the crockpot, it basically melts in your mouth.
Ingredients:
- 1 lb beef stew cubes
- 2 medium sweet potatoes, cubed
- 1 medium onion, chopped
- 2 cloves garlic
- 1 can of diced tomatoes
- 2 tbsp sesame oil
- 1 tbsp italian seasoning
- 1 tsp chili powder
- 1 tsp sea salt
- 1 tsp ground pepper
Put your beef in the bottom of your crockpot. Then cover it with the sesame oil and seasonings.
On top of the meat, place your cubed sweet potatoes, followed by the onion and garlic, and lastly the canned tomatoes. Cook on Low for 6-8 hours. I cooked mine for 6 hours and it was perfect.
And that was it. I love soups that require little to no work. Especially when you are feeling under the weather.
