Alright so I wasn’t planning on posting today. But as I was eating my lunch, I got so excited about it that I knew I needed to share. On Monday I cooked up 5 pieces of catfish for my lunches this week. It’s super easy, takes less than 30 minutes and instructions can be found in my How to Cook a Week’s Worth of Lunches in Under 2 Hours. The only difference was this time I seasoned them with chili powder and cayenne pepper for a kick.
Well last night I was just about to steam up some broccoli to add to my fish for today when I saw the clock. I was tired, it was late, and I just didn’t want to cook anything. So instead I opened up this bag of salad that I bought at Costco.
Sorry about the stock photo there. Anyway, this bag, which I think cost me under $5 at Costco, is a “make your own salad kit.” Not only does it have the veggies, but also the dressing and cranberries etc.
The veggies are great! Broccoli, Brussels Sprouts, Green Cabbage, Kale, and Chicory.
The rest, however…not so much.
Dressing: Soybean Oil, Sugar, Water, Cider Vinegar, Salt, Orange Juice Concentrate, Poppy Seeds, Egg Yolk, Xanthan Gum, Lemon Juice Concentrate, Onion*, Lemon Peel*
And the cranberries and seeds?
Dried Cranberries: Cranberries, Sugar, Sunflower Oil.
Roasted Pumpkin Seeds: Pumpkin Seeds, Canola Oil, Salt.
Eww. Needless to say, I threw that part out. So instead I quickly whipped up some dijon dressing. Unfortunately I didn’t measure but I don’t think it’s really necessary. Just go for it. I used extra virgin olive oil, dijon mustard, onion powder, garlic powder, italian seasoning and a little salt.
So for my lunch today, I heated up the catfish in the microwave, then broke it into pieces and put it in my salad. Amazing. Seriously.
Yup. it was so good I took two pictures. Now I know what I’m eating tomorrow for lunch.
